    We had this for supper but both felt it's probably better as a breakfast/brunch dish. I liked the tiny croutons which I baked in the oven rather than frying and sprinkled over the top rather than mixing into the eggs. Didn't roast the peppers but chopped finely and sauteed before adding the tomatoes. Garlic is a nice touch which ups the flavour. Definitely the best Piperade recipe I've made.
