    Really tasty. I used chicken breast, 1 orange + 1 green bell pepper (for 2/3 recipe), frozen corn, mozzarella instead of jack cheese. Like kbrooks, I sauteed the peppers and onions first before adding the chicken.

    Super fast and easy! Great flavors. I used chicken thighs, red bells,fresh corn. Didn't have a poblano but used a pasilla which worked fine. Also sauteed the peppers and onions for a few minutes before adding the chicken slices so they'd end up cooking evenly.
