    I am always searching for a great pumpkin muffin recipe and this is my new favorite. I loved the texture that the oats give to these muffins. I used low fat plain yogurt and omitted the prunes since I didn't have any on hand. These are pretty healthy which is also a plus. Next time I would cut back on the sugar (maybe 1/4c white and 1/4c dark brown) and also decrease the spices a bit (I loved the spicing in these as compared to most other recipes I have tried, however I'm trying for a more pronounced pumpkin flavor and less spice). I may also try using a whole 15oz can of pumpkin instead of just 1 cup.
