      Delicious soup, and relatively easy. I've made it with both ground veal and ground pork, and both were good.

      Delicious and much easier and more fun to make than I anticipated. There is no green like escarole for flavor and texture. I used veal for the meatballs and mixed with my hands. They meatballs were luscious and tender. Next time I might an ounce or so more ditalini.

      Fabulous recipe. The mix of flavors is great - the umami from the porcini powder, the richness of the beef and the bitterness of the arugula. Will definitely make again.

  • Pumpkin-oat muffins

      I am always searching for a great pumpkin muffin recipe and this is my new favorite. I loved the texture that the oats give to these muffins. I used low fat plain yogurt and omitted the prunes since I didn't have any on hand. These are pretty healthy which is also a plus. Next time I would cut back on the sugar (maybe 1/4c white and 1/4c dark brown) and also decrease the spices a bit (I loved the spicing in these as compared to most other recipes I have tried, however I'm trying for a more pronounced pumpkin flavor and less spice). I may also try using a whole 15oz can of pumpkin instead of just 1 cup.

      This is Bill Granger's Coconut Bread recipe which is available online. This is great for breakfast. This is a not-too-sweet and moist loaf with cinnamon and coconut. It is quick to make (no mixer required). I used Bob's unsweetened coconut and it worked fine. I sliced it and froze individually wrapped slices and thawed briefly in microwave and they were fine.
