    I adapted this to a low-carb diet by using omelets instead of pancakes and more creme fraiche instead of bechamel sauce. It was good, lovely comfort food. It would certainly look and taste good enough to serve to guests. Filling pancakes always makes me feel very old-fashioned housewifey, but it is an integral part of this recipe.
