Bombay sandwich from Sandwiches of History - The Cook Book: All the Best (and Most Surprising) Things People Have Put Between Slices of Bread (page 93) by Barry W. Enderwick

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

Can substitute bread of your choice for white sandwich bread. See recipe for a variation.

This is not a quick sandwich in that it requires boiling and cooling potatoes and pulling out the panini press. However, it is a very pleasant surprise for your vegan/vegetarian friends. I actually followed the recipe to the letter with the exception of my white bread being oat bread, i.e. what I happened to have in the house. The green chutney recipe is good in its own right served with pappadums.
