Can substitute pork back bones for pork neck, pointed cabbage for flat cabbage, and other chilli flakes for gochugaru. The books "Dōbutsu-kei broth" and "Sapporo-style noodles" called for in this recipe can be made in advance. See recipe for topping suggestions.
