Can substitute pork back bones for pork neck. The books "Chintan broth" and "Hakodate-style noodles" called for in this recipe can be made in advance. See recipe for topping suggestions, and for variations.

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

This was very involved, which is not unexpected. The resulting soup was lovely and light with a very clean taste. I served with menma, chashu, scallions, and soft boiled eggs. The recipe was definitely an all-day event, so break it into chunks or expect to do it on a slow weekend. I'm glad I have extra broth and tare, because I don't anticipate having the energy to make this again soon.
