Cream scones from Baking - From My Home to Yours (page 27) by Dorie Greenspan

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

Notes about this recipe

These scones have good flavor and a tender texture that is more flakey/biscuit-like than cake-like. I baked them for the time specified in the recipe and they came out a bit on the dry side for me (and then got drier as the day went by). I did cut back on the currants from the 3/4 cup specified in the recipe to 2/3 cup (more in line with the currant level I like). Next time I'll try soaking the currants first to plump them (so they can provide some internal moisturizing!) and/or take the scones from the oven earlier.

  • Tea and Scones

There is nothing better first thing in the morning than a cuppa tea and a fresh baked scone. IMO!! And if the scone is Dorie’s it’s extra better.

...there are certain occasions in life that deserve indulgent baked goods, unadulterated by whole grain flours and blessed with the amount of butter that god (or Dorie Greenspan) intended.
