    I was a little worried about how rich this recipe might be so I used half and half instead of cream and it was still definitely creamy and delicious (I also used 20 oz tortellini, 12 oz spinach and chopped the onion rather than grating). I loved the spinach and artichokes, I don't know how much it reminded me of the dip, but it was still tasty. Sadly my kids didn't love it but I found it nicely comforting.
