Smoky black-eyed bean stew from Feeding Creativity: A Cookbook for Friends and Family (page 145) by Mary McCartney

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

Can substitute chilli blend for Cajun seasoning, and kale or cavolo nero for chard.

Very good recipe for black eyed peas. Used Melissa’s 11 oz pre-soaked black eyed peas cooked in the instant pot for 4 minutes and 15 minutes release. Don’t like things very smokey or spicy so used about 3/4 teaspoon of smoked paprika- was still a little spicy for me but good. Used a little more of the Cajun seasoning. Substituted cherry tomatoes for the re pepper - added tomato with the beans. Made enough for 4. Could serve with rice. Would redo.
