    Good brownie with delicate mint flavor, though if you’re a big mint fan these may not have enough to satisfy. I had to go out of my way to find After Eight mints and was disappointed that they completely melted into the brownie during baking. The picture in the cookbook shows a nice line of mint candy so not sure what happened to mine. If you’re going for this look, maybe freeze the mints before assembling? Or use a thicker, and much easier to find, peppermint patty. I tasted the batter and didn’t find the chocolate flavor to be deep enough so added some cocoa powder and espresso powder. Would do this again if making these brownies.
