  • Chocolate cream pie

      This pie had a deep chocolatey flavor, very luscious. HOWEVER, I had some issues which may have partly my fault, since I don't do a lot of baking anymore. The crust was the most problematic--the author says, bake 10-15 minutes till crisp to the touch. Well after 13 minutes, the bottom of the crust looked to be swimming in butter & was very soft, so more time was added until it finally looked & felt reasonably firm. The finished product was rather a tooth-breaker, difficult to even slice through. The filling was tasty, but almost too thick, which may have been from slight over-ccoking, but I was pretty careful. It did please my guests, but was not as hoped for. Will probably try again now that I know not to bake the crust for longer than required.

      Wow, what a rich & luscious cake! Enjoyed by all, except the son who doesn't like coconut. the only issue was the middle of the cake sinking a lot during baking. Made the cake a day ahead & it stayed fresh & moist.

  • Mint chocolate brownies

      Good brownie with delicate mint flavor, though if you’re a big mint fan these may not have enough to satisfy. I had to go out of my way to find After Eight mints and was disappointed that they completely melted into the brownie during baking. The picture in the cookbook shows a nice line of mint candy so not sure what happened to mine. If you’re going for this look, maybe freeze the mints before assembling? Or use a thicker, and much easier to find, peppermint patty. I tasted the batter and didn’t find the chocolate flavor to be deep enough so added some cocoa powder and espresso powder. Would do this again if making these brownies.

      These are absolutely delicious and easy! They bake up with a nice shiny/crackly top. Use good chocolate - I used 66% Mexique from Cacao Barry.
