    I wanted to make zucchini fritters that didn't have cheese in them, and settled on this recipe. Anna doesn't specify what sized zucchini - I used one bigger than I would normally buy, but I think it could have used more. Also I found the fritters tasted "eggy" to me - maybe because I have just started using eggs again after decades of not cooking with them. In fritters I would normally use a replacement of chickpea flour + cream + eno fruit salts for eggs. I must have gotten used to that taste as I prefer it.
