Red quinoa, hummus, and arugula with crispy chickpeas from A Grain, a Green, a Bean: One Simple Formula, Countless Meatless Meals (page 72) by Gena Hamshaw

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

This creative use for hummus is a useful variation. Layering it first on the plate/bowl provides the creamy flavor and blends it successfully with other tasty ingredients, while retaining its intensity. A nice change when serving hummus and would work with many toppings.
