    This salad was sneakily laborious as I got into it. We would make quite a few substitutions next time: 1) replace puffed rice or puffed quinoa with an actual grain like quinoa as the puffed rice was just soggy and didn’t add anything substantial to the dish. 2) marinate the tempeh and likely crisp it in the air fryer as texturally it was too similar to the cauliflower. It didn’t have enough flavor with just the dusting of 5 spice 3) more goji berries 4) subbed tahini for the peanut butter in the dressing so tasty! 5)2 TBS of sambal olek is too much even for someone who loves spice. Cut it back by at least 1 TBS. 6) water added to dressing 7) finished with fresh mint 8) nice time will substitute roasted and chopped almonds in place of cashews for more texture and crunch. It was a salad that just needed a bit more development. But the 5 spice and the spicy dressing were great together. Using the grain will make it a full meal vs just a side.
