The book's "Pickled shiitake," "Barbecue sauce," and "Chilli oil" called for in this recipe can be made in advance. Allow to marinate for at least 1 hour. Can substitute other tender-cut beef for picanha, and rapeseed oil or the oil reserved from the book's "Garlic chips" for vegetable oil.
