    I loved this. This is the kind of recipe that you can easily substitute different options -- chard or spinach instead of kale would work great. Very cozy and savory stew, looking forward to making it again when cool temperature set in.

    This was a quick weeknight meal and oh-so-delicious. Substituted sweet Italian sausage for spicy, and then accidentally grabbed one can of white beans and one can of chickpeas from the pantry instead of two cans of chickpeas (but the beans worked perfectly well). Made 6 servings instead of 4. Delicious!

    I used ground chicken and added spicy Italian seasonings in place of the sausage and white beans in place of the chickpeas, but this turned out really good! My sundried tomatoes weren't super flavorful, so next time I'll make sure to get a better quality brand, but still a delicious soup!
