Saffron 'speltotto' from the monks of Monte Oliveto (Il farrotto dei monaci) from Winter in Tuscany: Cosy Recipes and the Quanto Basta Way (page 114) by Amber Guinness

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

Notes about this recipe

  • Eat Your Books

Can substitute pearl barley for spelt, any cooking wine for dry white wine, Parmesan cheese for pecorino cheese, and the book's "Chicken & beef bone broth" for vegetable stock.

Used a parmesan rind in the stock which helped with depth.
