    Carries a great tangy punch in a lovely shortbread pastry. More like a cranberry jam sandwiched between two giant shortbread cookies than a cake. Today when I made the cranberry quick jam I spiced it with a bouquet garni bag filled with a broken cinnamon stick, a broken star anise, two cloves and 2 peppercorns. Served it to guests; very popular.

    Sweet, tender, buttery cookie filled with tart ruby fruit...this is a visual as well as a taste sensation. I often make it with leftover homemade cranberry sauce.
