    5 stars. I don’t typically reach for a Curtis Stone recipe but this recipe is making me want to dig into this book more! Roasting the fennel and onions is a delicious way to rounding out the flavor of the soup, although roasting takes closer to 40mins for caramelization than the 20 suggested. All the parts come together for a spoonful that highlights all of them without competing or dominating - it’s quite magical. Didn’t use heavy cream because I didn’t have any, used a vitamix to blend. Everyone loved it.
