One-pot chicken sausage, spinach, and rice from Don’t Think About Dinner: Save Time and Money with 125+ Easy, Nourishing, Delicious Recipes for Every Meal (page 171) by Jenn Lueke

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

Can substitute reduced-sodium tamari or reduced-sodium soy sauce for coconut aminos.

This was a quick and easy dinner, but wasn’t anything super special. I would make it again if I had the ingredients on hand and wanted a one-pot easy meal, but I wouldn’t go out of my way to make it.

Really easy to vegetarianize! Used veg broth and veg sausage in place of chicken with really nice results. I will say I need to remember that when Jenn Lueke says low sodium soy sauce and broth she MEANS IT. And I always buy regular, so if you’re like me and do that you’ll want to use a light hand with the soy sauce and also probably omit the salt from the spice mixture.
