    This cookbook is an excellent choice for gluten free, dairy free family meals. As a foodie parent, I find myself wanting a little more depth of flavor. But my tween and teen are really enjoying what I make from this, and getting a lot of protein, fiber and vegetables. It’s also very easy to cook from this cookbook if you only shop at Trader Joe’s as the ingredients seem to match up very well (not 100% but close). And they’re very practical, very easy recipes.

      I made this for dinner last night and it was pretty easy and tasty. I used half and half instead of coconut milk to lower the saturated fat and I think it turned out fine. It may have curdled a tiny bit, but no worse than reheating cream sauce leftovers. If I made it again, I may wait until it’s out of the oven to add the lemon juice.

      This has a lot of ingredients I like but the dish is spoiled by the feta over-powering the other ingredients. I used less than the listed 8oz and I suggest using no more than 4oz.

      The problem with this recipe is that if you only have regular (read: not low sodium) soy sauce it’s VERY hard to keep the glaze from being too salty.

      Really easy to vegetarianize! Used veg broth and veg sausage in place of chicken with really nice results. I will say I need to remember that when Jenn Lueke says low sodium soy sauce and broth she MEANS IT. And I always buy regular, so if you’re like me and do that you’ll want to use a light hand with the soy sauce and also probably omit the salt from the spice mixture.

      This was a quick and easy dinner, but wasn’t anything super special. I would make it again if I had the ingredients on hand and wanted a one-pot easy meal, but I wouldn’t go out of my way to make it.

      Really easy, really good. Have made twice. I bake for longer than 30 min to get my chicken breasts cooked to 165. It’s easy to set aside portions for family members who don’t like feta. This recipe will come out very differently depending on the kind of feta you use so have fun experimenting. Also I use bagged precut broccoli but cut it down further to small florets. Also good with some sliced onion added to the pan to roast. My kids like this, which pleases me as it’s so healthy.

      In place of skewers I made this following her tray bake instructions & just cut my smallish chicken thighs in 1/2. No zucchini on hand so upped the onion and used a larger amount of R, Y & O peppers . We started with flatbreads, layering tzatziki (with added feta), chopped romaine and lastly the chicken/veg mix. Very, very good.

      Okay I'm really trying to enjoy this cookbook but this is the second out of three recipes I've tried that turned out barely edible. This was like soup with some chicken? If I were to make again I would leave out the coconut milk and maybe do 1/4 a cup of chicken broth and up the spices a ton.

      I initially added less maple syrup because I was using sweetened PB, but ended up adding a bit more than the recipe to balance the flavors. I think coconut aminos would be sweeter than the soy sauce I used. It would also be excellent with a pinch of cayenne or something similar.

      I’d prefer a little more maple and a little less salt and tahini, but this was fun to try! Blending the “tahini milk” with cinnamon and syrup is something I’ll keep doing!

      Okay, so apparently the almond flour is VERY important to this recipe. Do not do as I did and try to substitute another flour without changing the recipe. I used a gluten free flour and these turned out like sand :( Might try again, but be warned!

      Very easy to make and very delicious. I used a hazelnut and almond butter and added freeze dried raspberries - the recipe is very flexible on the ingredients.
