    Can substitute bone-in skin-on chicken thighs for bone-in skin-on chicken breasts, chicken stock for vegetable stock, and russet potatoes for Yukon Gold potatoes. You may use the Preserved lemons recipe on page 41.

    This was really good! It was low mess and easy on a weeknight. I would cook the lemons and olives for 25-30 minutes instead of 15 if I were to make it again. I subbed whole chicken legs for chicken thighs.
