    Pork marinates for at least 2 hours or overnight; pigeon peas soak overnight. Can substitute dried oregano for fresh oregano, canned pigeon peas for dried pigeon peas, and smoked pork or bacon lardons for smoked ham. You may use the annatto oil recipe on page 307, and the sofrito recipe on page 299.
