Can substitute store-bought tempeh burger patties or store-bought veggie burger patties for tempeh burger patties, store-bought shio koji for smoked onion shio koji, aquafaba mayo with miso or store-bought vegan mayo with miso for miso sauce, store-bought ketchup for tomato ketchup, and store-bought pickles for sour dills. You may use the Tempeh burger patties recipe on page 91, the Smoked onion shio koji recipe on page 71, the Miso sauce recipe on page 161, the Tomato ketchup recipe on page 162, and the Sour dills recipe on page 39. Tempeh patties take 2 to 3 days to make; patties marinate for at least 1 hour.
