Can substitute seitan for tofu puffs, strong white bread flour for plain flour, other 5-spice for the book's "Shiitake 5-spice," and a mixture of chilli oil of your choice and ground Sichuan pepper for Sichuan chilli oil. See recipe for optional MSG add-in.
