    Can substitute red pepper flakes or Spanish hot smoked paprika for hot Calabrian chili powder, duck fat or olive oil for chicken fat, and red radicchio for Castelfranco radicchio. Chicken brines for a minimum of 30 minutes and soaks in buttermilk for at least 30 minutes (up to overnight).
