Can substitute cod for black cod, Dijon mustard for English mustard, lemon juice for yuzu juice, and shop-bought chilli oil for Philli's Chilli Oil; fish marinates for a minimum of 6 hours but preferably overnight. You may use the Philli's chilli oil recipe on page 250.
