Can substitute fresh porcini for dried porcini, fennel sausages for marinated sausage meat, king oyster mushrooms for oyster mushrooms, and conchiglie for spizzulus. Sausage meat marinates 6 hours or overnight. You may use the spizzulus recipe on page 80.
