    This beautiful and easy dish has become a firm Summer favourite in our house. It so celebrates the garden - capsicums, cherry tomatoes and basil. It is also very versatile - add chunks of feta and olives with the tomatoes, or use other herbs in the oil. Indeed, tuck some herbs like oregano around the tomatoes before they go into the oven. Delish.
