    I'd never used cucumbers in a stir-fry before and wasn't sure if I'd like the taste, but they added a nice crunch and delicate flavour to this healthy, summery dish. The sauce, which was Chinese rice wine, soy sauce, sesame oil, cornflour, caster sugar and probably something else I'm forgetting added a nice amount of flavour. The cucumbers and peppers made this pretty to look at and the chopped peanuts added at the end gave it an extra dimension of flavour and texture.
