    Everyone enjoyed. I cut down on the spices to keep it from being too hot for the kiddo. I also omitted coconut milk because that is not a flavor everyone in the family enjoys, but I kept the stock the same to keep it from being too soupy. It probably didn't have as much flavor that way, but it was still tasty and an easy enough dinner. I substituted kale for spinach and that worked fine.
