    I agree with the other reviews that this is a wonderful soup, especially with the fresh mushroom "salad". It may not be the prettiest soup but it definitely hits the spot when you crave mushrooms.

    What a delicious soup. Easy to make, with full bodied mushroomy flavor. I used a variety of mushrooms, water with a little Chicken Better Than Bouillon. With the garnish, I thought it was quite a beautiful presentation too.

    This is the ugliest soup in my arsenal; and one of the most delicious. It definitely needs the "salad"--all the sliced mushrooms, chives, parsley and green onions to offset the grey/brown color. The 2nd time I made it, I ran out of white wine (how?)- and used marsala, which made it uglier; but even better tasting. Love it.

    Pg. 72. This soup has been on my To Do list for years and yet somehow I'd never gotten around to it. I finally did and it made a lovely starter for Christmas dinner! I followed the directions exactly and it proved to be a simple, straightforward and relatively quick recipe. It's not the prettiest soup, kind of a dull brown color, but the taste is sublime.

    Definitely a keeper for me. Lovely flavour, lovely silky texture. And a great soup for winter, when there aren't that many interesting local veg to play with. Also, as noted below, quite healthy!
