    Favorite carrot salad. Lasts for ages in the fridge, great for meal prep. I always stir in way too much chopped parsley, sometimes nuts or sunflower seeds, sometimes raisins or currants. I love the mustardy dressing, and agree as-written the recipe makes too much. This time I added cooked wheat berries and chickpeas with the full amount of carrots and dressing, making this simple side dish into a proper lunch.

    Great quick salad. Reminds me of carrot salad that used to be served at Mon Ami in the US. Made late at night - so didn’t have the extras to add but felt like it needed raisins or something so while optional would add something for texture

    Delicious and easy salad, great for potlucks. I've made it many times, and it's always a hit. I'm about to make a big batch to take with me camping for Memorial Day weekend! I usually skip the optional ingredients. It's fine made ahead and is tasty either cold or at room temperature.

    I cut this in half and also found that that there was a ton of dressing. I did not add the nuts or currants BUT lately I have been adding a couple of spoonfuls of beet chutney to carrot salads (great use for a jar I was gifted). Also, we like a touch of sweet in tart vinaigrettes so we loved this dressing. I finished this with parsley & chives and it was a great side with crispy potatoes and grilled chicken skewers. I now can't decide if I like this one or David Lebovitz's better.

    I have been trying lots of carrot salads and finally found one my family really liked! I added currants, roasted walnuts and parsley. As others have mentioned, we only needed 1/2 the salad dressing.

    Delicious and made a nice side on this hot day. I didn't add any of the optional ingredients. If I'd had fresh parsley it would have made a nice addition.

    May 2018. I agree. Easy and delicious. Does not need honey. Makes a lot of dressing. Used all optional ingredients.

    So easy and delicious! I used a full pound of carrots but only needed half the dressing so we used the rest on salad greens throughout the week. Next time I will just double the amount of carrots so we have leftovers for lunches.
