    I usually just serve peppers & red onions like this with balsamic & feta but I wanted to try something different and it was a split decision. T really liked it, and while I definitely prefer balsamic over the red wine vinegar, I did like the use of the piment d'Espelette. I also skipped the green pepper and topped up the other colours.
