    This is a wonderful recipe and my go-to cake when there are too many egg whites stashed in the freezer. It's richer than an angel food cake, moist, flavorful, and works well either plain (especially fresh from the oven) or with various accompaniments - ice cream, creme anglaise, pastry cream, caramel sauce, blackberry sauce, vanilla frosting, etc. It works well with almond extract instead of vanilla or with hazelnut praline powder mixed in. The version I make is ~1.5X the quantity specified in Dorie Greenspan's recipe and bakes in a 11" pyrex pie plate - uses even more egg whites!
