Coconut friands from Around My French Table: More Than 300 Recipes from My Home to Yours (page 456) by Dorie Greenspan

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

These are like a cross between a coconut macaroon and a financier - very buttery and coconut-y! They're a bit bouncy/chewy on the outside but moist and tender inside. Very easy to pull together by hand. I agree with chawkins that the batter is too stiff for a whisk - I switched to a silicone spatula to stir in the coconut and the rest of the ingredients. Using a mini-muffin tin with 24 x 2 tbsp cups to make 24 cakes worked well.

Very good. Dorie said they can be made by hand in minutes by whisking ingredients together. I started out with a balloon whisk, but the dough was so stiff, it formed a ball inside the whisk, I had to switch to a Danish dough whisk to finish the job. I may try the stand mixer with the paddle attachment next time.
