    Plucked this recipe out as had a few aubergines that needed using- made a tomato sauce ( also from same book) to use. Found some croutons that I whizzed slightly to make crunchy topping. It was delicious - big thumbs up! What was surprising though was my 8 yr old ( who usually turns his nose up at dishes containing aubergines) raved about them. He ate the skins too-!
