    I was a little concerned by how much mustard there is in the filling. The flavor is definitely present in the finished tart, but it is not aggressive. This tart is super simple - there are no meats or cheese here. I used tarragon, which is my favorite herb, rather than rosemary. The pate brisée is thin, delicate and crumbly.

    Terrific picnic fare with late season tomatoes. Really need to pile on the dried beans when pre-baking the shell though, else it shrinks in spite of chilling.
