Cornelia Walker Bailey's pear bread from Southern Cakes: Sweet and Irresistible Recipes for Everyday Celebrations by Nancie McDermott

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

Can substitute vegetable oil for butter.

    p. 114 - This bread is a let down. First of all, the grated pears were indiscernible in the finished bread, they’d simply melted away. Worse though, you couldn’t taste them at all. In fact, all you taste is overwhelming flavour of the 1tbsp of cinnamon the recipe calls for. To boot, the bread was too dry for our tastes. I also noticed a discrepancy in the ingredient descriptions. In the ingredient list, the author calls for the pears to be grated finely however in the actual recipe directions, they are referred to as chopped pears (which frankly I’d have preferred) Also, while the recipe calls for walnuts, & has you toss them in some flour, no further directions are included on incorporating them. I did stir them in but clearly this book has some editing issues, a real nit with me since it erodes my trust in the book. I’m wondering if this book is a dud as other EYB recipe reviews are underwhelming. Photos here: http://chowhound.chow.com/topics/1010527?commentId=9524264#9524264
