Accompaniments: Small rolls of veal or pork, stuffed with onions and cheese, in cream sauce (Paupiettes de veau ou de porc à la Tourangelle [farçie à l'oignon et au fromage]); Cornish hens or squabs, mushrooms, and olives in a rich herb sauce with croutons (Pigeons ou pintades, sauce "tortue")
