    Very good but burned in Instant Pot so would need to try PIP. Did not like brown color from mushrooms: flecks of gold polenta looked undercooked against brown liquid even though tender. Maybe keep mushrooms separate? Olives good, roasted piquillo peppers (variation) pretty but too tangy. Lovely with “cacio e pepe” sautéed cabbage and TJ’s sweet chicken apple sausages.
