    This will be a repeat - quick to prepare and very nice flavor. I used boneless skinless thighs. After removing the chicken from the marinade, I whisked in a little olive oil and then tossed some baby potatoes in it. Put the potatoes in a roasting dish and placed the chicken on top. Roasted at 425 for 35 mins.

    Pg. 111. Love this! Doubled the recipe. Used mortar and pestle for the garlic mash, Bragg's Aminos instead of salt, and served the lemon wedges. Highly recommend.

    My entire family loved this dish, and it was so easy. This is definitely a go-to recipe for busy nights. I didn't bother to purée the garlic with the lemon juice, et al. This would have required more cleanup than necessary for this recipe. I simple chopped the garlic very finely. I also boiled the marinade and drizzled it over rice.
