    Made this for the first time and it was a big success. I had a bunch of Jimmy Nardello red peppers so used those instead of the red bell. Also sauteed a chopped fresh jalapeño with the peppers and onions and used plain canned diced tomatoes since I didn't have Ro-Tel. Cooking the chicken with the lime juice and ancho chili powder yields really tasty chicken and the flavor of the sauce is wonderful!
