    Delicious supper, doubled for two. We used red peppers instead of green with yellow tomatoes, and some really flavourless black olives. With these colours, it looked somewhat old-fashioned, and could have done with some parsley. We wondered about a sprinkle of chilli, too, but the coarse black pepper provided some bite. Cooked in a fan oven at 170 degrees C for 15 then 5 more minutes, perfectly done.
