    These were delicious. The batter was a bit thicker and spongier than I usually consider for pancakes, so I made some as pancakes and some as individual waffles. I almost like the waffles better. I don't know if this texture is intentional, or due to my use of gluten free flour, but the results were tender, light, and delicious. Will definitely make again and again.
