    This is a very easy and tasty recipe. It takes almost nothing to cook and it's perfect for a middle of the week dinner, especially if you do not have much time to spend in the kitchen. You cut all the veggies, onions and capsicums in julienne and add the chicken (I used thighs) also cut into thin strips. Add salt, pepper, lime zest and oil and mix well. You fry it until the capsicum is caramelized and the chicken cooked. To serve, you spread the tortillas with hummus, add the lettuce, the chicken and some sour cream and that's it!! I also added some homemade chilli crunch oil, and it was delicious!
