    p. 62 – I had 2 chipotle sausages that had been lingering in the freezer so thought that they’d make a good substitute for the chorizo in this appealing breakfast dish that I flagged immediately after seeing the lovely photo in the book. Very simple to put together, we thought of this as a frittata. I don’t think I’ve ever added tomatoes to an omelette or frittata before however we really liked the freshness they brought to the dish. Caramelized onions were also a nice addition. We loved this and felt the possibilities were endless in terms of the various meats you could use as an alternative to the sausage.
