Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

    My husband has made this tea-smoked duck many times for our progressive dinner main course. It does involve a little more work than typical (steaming over lapsang souchong tea in a bamboo steamer basket inside a wok) but it is very delicious. Bittman recommends one 4-5 lb duck for 2 people as a main course, but we have found that 2 ducks serves 10 people with leftovers as we serve with rice and a vegetable plus the people have come from appetizers and first course as part of progressive dinner.
